Salmon with Sweet Potato Sheet Pan

Ingredients:
2-4 Fresh Salmon Filets
1 Big Sweet Potato
1-2 Fennel
Cherry Tomatoes
Small tin of Chicpeas
Block of Feta
Salmon Marinade
Dijon Mustard
Maple Syrup
Fresh Lemon Juice
2 Cloves Garlic
Fresh Thyme (if you have it)
1/4 tsp paprika
Salt + Pepper
Cooking Instructions:
Mix equal parts dijon and maple syrup together, add the juice of half a lemon, minced garlic, (thyme), paprika, salt and pepper and combine. Let salmon marinate for 20 to max 30 minutes.
Preheat oven to 200 ºC (about 400 ºF)
Meanwhile cut the sweet potato into inch-long cubes, the fennel into thick slices, tomatoes into halves. Place everything on a lines baking trey, sprinkle washed chickpeas onto. Season with salt, pepper and chili flakes.
Place sheet pan in oven for approximately 20 minutes or until sweet potatoes are nice and cooked.
Heat up pan to high heat, add a little oil, place salmon a skin side in the pan, turn down heat to medium. Cover and let cook until white particles appear on top of the salmon - then start flipping around carefully, grilling from all sides.
Plate Salmon with the veggies and sprinkle feta on top before serving.
