Grandma’s Stuffed Tomatoes

Ingredients:

  • Big Firm Tomatoes (cut off top, carve out, save top)

  • 500 g Ground Beef (any protein works)

  • 200 g White Rice

  • 1 kg Tinned Tomatoes

  • 2 Onions

  • 1 Garlic Clove

  • 1 tbsp Tomato Paste

  • 1 tbsp Oil

  • 1 tbsp Sugar

  • 1 tbsp Flour

  • 2 Bay Leaves

  • Vegetable Stock

  • Fresh Parsley

  • Marjoram

  • Salt + Pepper

Cooking Instructions:

Tomato sauce: finely chop one onion, crush the tinned tomatoes, heat oil up in pot, cook onions and sugar until translucent, add tomato paste and flour, pour in a little vegetable stock, now add the previously crushed tomatoes, salt, pepper and bay leaves and let simmer for 20 minutes, blend when done.

Cook rice.

Filling: finely chop the other onion and the garlic, first cook onion in oiled pan until translucent then add garlic, let cool off, mix with ground beef, cooked rice, finely chopped fresh parsley, a little vegetable stock, small amount of marjoram, salt and pepper.

Now fill tomatoes, place the saved top of the tomato back on there and press down a little, place the stuffed tomatoes in a casserole dish and pour the tomato sauce around, cover the dish with aluminum foil, place in oven for 45 minutes at 180°C (about 350°F).

Serve with cooked potatoes and if you want green salad.
